Madagascan Salt is a light brown salt that s got a high moisture level. Bourbon salt has light mineral flavour that s great with vegetables, roasted fennel, ratatouille or trout fried in butter. Madagascan Bourbon Salt is a pure salt with a clean white colour. It is processed by women from the Ankazombalala Rural Commune in south-west Madagascar. Three villages make Madagascan Bourbon Salt, or Siratany, which translates to salt of the earth in Malagasy. The company describes its own premises: "It was set up in 2003 by Axel and Sophie Steenberg (pictured) in North Yorkshire.
