The whole rye grain crushed into two or three pieces and used traditionally in the preparation of pumpernickel bread. It is also referred to as "cracked" rye. Chopped rye can also be used to add flavour and texture to other breads such as a standard white or wholemeal loaf, or simply sprinkle on top of your dough after final moulding and before baking to give your loaves a delicious nutty flavour.
