It's a dense, flavourful fat and is often harvested from male cattle, steers or bulls. It comes as a 1kg pack but may contain more than one block/slice of fat. Adding moisture (for basting) and flavour to meats during cooking, it is solid and firm, and is often used in charcuterie, sausages, or traditional meat preparations where a strong, rich fat is required
