We use British Victoria Plums for this Autumnal preserve. T hey’re a lovely warm red colour with an orangey/purplish tinge to them. We use the whole fruit, including skins, so you get a really authentic plum taste. We slice the plums by hand and cook them on low for as little time as possible to retain some of the wonderful fruity pieces that we think every jam should have. We then add sugar (less than a traditional jam), and fresh lemon juice to bring out the flavour. The reduced sugar recipe and shorter cooking time creates a soft-set, spoon-able and oh-so-fresh plum taste with a reddish/ora
