We are delighted to have coffee from Finca El Pedregal on our counter this Spring. Neftali Fajardo is one of the first farmers we have bought from with the help of the Specialty division of the National Federation of Coffee Growers (FNC). Neftali has an interesting take on the traditional-washed-process method, where he puts the cherry in a holding tank to start a fermentation before pulping and the later fermentation in mucilage. We find this gives the coffee a juicy tropical fruit profile. Neftali has two hectares (making this a small farm by Colombian standards) planted with Yellow Bourbon.
