This is the first harvest we have had from Lucía Mamani and Humberto Vilca’s new plot of Pacamara. Pacamara is a cultivar which grows exceptionally well in Caranavi, and we’re delighted to have such a great example of it on our counter. The bean is both larger and of lower density than other varietals which gives it a distinctive appearance but can make it a little tricky to roast. Typically, the coffee will reach its key roast stages at a lower temperature than denser and smaller coffees. It needs careful management in the machine to make sure it doesn’t run away in its exothermic stages. It
