Quinces make a delicious richly flavoured jelly that has a lovely dark orange/red colour. This versatile jelly works well with scones and cream or as a cake filling, but works equally well as an accompaniment to cheese, particularly brie and camembert. Jellies are made from only the juice of the fruit strained though a muslin bag, therefore the yield is lower per batch than would be obtained with a jam.
