This apple-based jelly is infused with chilli during cooking and contains a suspension of chilli flakes. This is a lovely clear jelly with a jewel-bright red colour and no artificial colourings. Traditionally used as a condiment to accompany cheese or fish, this makes a lovely glaze as well to add a bit of heat to a barbecue. This jelly is allergen free. Jellies are made from only the juice of the fruit strained though a muslin bag, therefore the yield is lower per batch than would be obtained with a jam. Jellies should be clear and not cloudy and may be flavoured with herbs or other spices. M
