The business was established by Yvonne and Les, operating from Newtonmore in the Scottish Highlands, overlooking the Speyside region with its heather-clad mountains and the River Spey. On the recipe: "we took premium comb honey and fermented it, as our ancestors did to make mead. Suddenly, the flavour came alive!"
