Over the years, we have found that our Verdant house yeast strain is incredibly flexible. Yes, it can give rise to apricot and vanilla esters in our New England style beers, but it can also produce extremely clean and crisp sessionable ales, almost akin to a west coast yeast. It was this malleability that led us towards the concept of Disco Italiano (Pale Ale 4.8%).
