We’ve been speeding through our Angus loins of late, which has left us with something of a very welcome problem: an abundance of Chateaubriand. Sourced from Brongain Farm, near the Welsh Borders , this is beautifully marbled, dry-aged Angus beef, cut from the thickest, most prized part of the fillet. Tender, succulent and made for cooking whole before carving into thick, rosy slices, it’s the sort of centrepiece normally reserved for very special occasions.
