Prepared as a rolled joint for even cooking. A lean and tender cut of beef, makes a great pot roast, but can be barded with a layer of fat and roasted quickly to serve pink. Cold and finely sliced, it makes the best beef sandwiches. Season and roast in a hot oven for 5mins, then turn down to 170C and roast for 15mins per 500g for rare, 20mins per 500g for medium. Rest the meat before carving SERVING approx. 300g per person, rounded up for left overs.
