A rack of lamb is a wonderful centrepiece for your Sunday roast, served here untrimmed so that you can render the fat in a pan before roasting. Each rack serves two, average weight 600g. Perfectly delicious when lightly seasoned and roasted until blushing pink in the middle. For something a tad more special, coat with a mixture of breadcrumbs, herbs and (optional) parmesan before roasting. The result is a deliciously crunchy crumb to contrast your soft, tender lamb.
