Tender eyes of meat with a covering fat that bastes the meat as it cooks. These neat lamb loin chops are taken from the first eight ribs of the loin. Allow 2-3 cutlets per person, average weight 550g for six cutlets. Take the cutlets out of the fridge and allow them to come up to room temperature before cooking approximately 30 minutes beforehand. Marinate for a few hours with lemon, rosemary and olive oil, then sear on the barbecue hot and fast leaving the chops slightly pink in the middle.
