Generously sized duck legs from our free-range Botterill s ducks. Rich, deep flavour, perfect for homemade confit. Our ducks are reared to full maturity which makes them twice the size of a standard duck, and so the legs are a very good size. Botterills ducks are all game hung to create an intense flavour and dry-plucked to maintain the quality of the skin. At certain times of the year, there will be some stubborn feather quills these can be easily removed before cooking (and any small ones will melt away.
