Large duck breasts from our Botterill s ducks. Rich, deep flavour with a good layer of fat under the skin that crisps up beautifully when rendered slowly in a pan. Our ducks are reared to full maturity which makes them twice the size of a standard duck, and so each breast will serve two people. Botterills ducks are all game hung to create an intense flavour and dry-plucked to maintain the quality of the skin.
