The best quality veal we can find from Limousin, France. Calves are bred for meat not a by product of the dairy industry. They are kept with their mothers and Milk fed until they are killed at 6 months. A mix of shoulder cuts. Can be stewed or braised at a simmer for 2 hours but for melt in your mouth meat cook on very low temp for up to 4 hours.
