This hearty, homemade aubergine parmigiana bake is a layered delight of fresh vegetables and creamy mozzarella cheese. The dish is cooked entirely from scratch in our Bermondsey kitchen by our expert team of chefs, starting with aubergine which is first roasted separately to give it a little bite. Roast aubergine is piled high with slow cooked tomato sauce and mozzarella cheese, then baked to achieve its signature golden top. Weighs approximately 1Kg and feeds 3-4 people.
