Our single cask releases continue to gain popularity and I think for good reason. Every cask is unique and has a story to tell. The distillers art in making the un-matured spirit is then enhanced by very careful cask selections for the incredibly long journey that then follows. Over the decades following distillation we keep an eye on the maturing whisky inside the cask and when the whisky tastes lovely it is time for bottling. This decision on when to bottle is a big one, leave it too long and the wood can become overpowering, bottle too early and some of the magic imparted by the cask can be
