Earl Grey is a style, not a fixed recipe; the one thing every version shares is bergamot, and everything else is down to the blender. This is my second take on it, and where my classic Earl Grey is creamy and rounded, this one goes the other way: brighter, zestier and more openly fragrant. The difference is in the base. Instead of a Ceylon, I have built this loose-leaf blend on high-grown black teas from Darjeeling, Nepal and the surrounding Himalayan foothills.
