The word teriyaki comes from Japanese: teri (照り), meaning the shine or lustre created by the sugar in the tare sauce, and yaki (焼き), meaning grilled or cooked over heat. It comes from Japan, around the Edo period (17th–19th century), and has since become recognised around the world. Despite all that popularity, we always wondered, why should there not be a plant-based one? So we set off on an adventure
