This is quick frozen, un-aged chicken mince, from free range chickens which are raised outside on fresh grass. This chicken is frozen 3 days after it is killed and packed. This minimises the development of histamine in the meat and is helpful for people who are trying to reduce the histamine content of their diet. To minimise histamine development It should be kept frozen, thawed quickly and cooked immediately after thawing.
