Firm and fresh tasting, with citrus at the front and a gentle herbal warmth behind it. The recipe takes us back to Andalucía, where bright flavours and good olives have a habit of appearing whenever something cool is poured. The lemon lifts the olives while coriander and garlic give the oil its fragrance. Serve them with grilled fish, roast chicken or a simple tomato salad.
