A little midnight restoration. Mezzanotte means midnight, and this is the sort of thing you might whip up after a large night out, when only something hot, tasty and restorative will do. A spoonful stirred through steaming spaghetti, a little pasta water and perhaps some grated Parmesan is often all that is needed. Made for us in Liguria with sun dried tomatoes, red chilli, garlic, paprika, oregano and olive oil, it is rich, warming and deeply savoury.
