An aromatic, deeply savoury blend of cumin, garlic, smoked paprika, turmeric, coriander, nutmeg, cinnamon and ginger. Shawarma has its roots in the Levant, where layers of marinated meat are slowly roasted until tender and richly browned at the edges. Our version brings those warm, fragrant spices together in a blend prepared by hand here in Dorset. Mix generously with thick yoghurt, Extra Virgin Olive Oil and lemon juice, then use it to marinate chicken thighs, lamb or beef. Leave it overnight if you can, then cook over hot coals, beneath the grill or in a hot oven. It is equally good rubbed
