Small, crisp and properly sharp. These little Spanish gherkins bring a bright vinegary snap to anything rich, creamy or generously buttered. Put a few beside pâté, terrines, cheese or cured meats and they will quietly sharpen the whole plate. Slice them into a salt beef sandwich, chop them through mayonnaise or tartare sauce, or scatter them over warm potatoes with herbs and a spoonful of mustard. They are particularly good with roast chicken and leftovers of almost any kind.
