Naturally fermented Kalamata olives, left to marinate in Extra Virgin Olive Oil with earthy cumin, fragrant coriander and the gentle warmth of cardamom. Dark, rich and deeply aromatic. We came across the original recipe in Maskanah, a small Syrian town east of Aleppo. Its warm spices and full flavour have stayed with us ever since.
