A good house oil should be the bottle you reach for without thinking. Ours is a single estate Extra Virgin Olive Oil made in Extremadura, Spain, from Hojiblanca, Arbequina and Manzanilla Cascareña olives. It is fruity and rounded, with notes of ripe tomato, banana and citrus, followed by a gentle peppery finish. The olives are grown on trees up to 200 years old by our friend Fernando Sánchez Mohino y Arias at Naturvie. His careful work produces an oil with plenty of character while remaining balanced enough for everyday cooking. Pour it over tomatoes, salads and warm bread. Use it for dressing
