Small onions, dark with balsamic and pleasingly crisp. Borettane onions have a natural sweetness that makes them particularly good for pickling. Here they are steeped in balsamic vinegar until glossy, gently sharp and richly sweet. Serve them with cheese and cured meats, scatter them through a salad or bring out the whole tin for a particularly generous gathering.
