Põhjaka Plum eau-de-vie is made from honest Estonian raw materials. We use three types of ripe, domestic plums in the fermentation of our wine there are sweet plums as well as bitter and drier plums. From these plums, we make a wine that is vinified in several stages over a few months starting with natural yeast, then finishing with cultured yeast. After the fermentation is complete, we allow the wine to settle . The resulting wine, dark and full of flavour, is distilled 2 times in our own copper still, resulting in an aromatic eau-de-vie.
